    I'm trying something new to me. I've peeled and smashed a bunch of fresh garlic cloves (proud to say that I grew) and put them in a makeshift cheesecloth sack. I've hung the bundle in with my fresh cured ham and doing it altogether at about 150F with cherry wood. I'll do the ham for about 6-8...

    Dr Pepper has worked for me. I dont find the meat sweet either. I put a nice rub on the outside, which has some brown sugar in it. that's the only part of the butt that has a hint of sweetness, in the bark. I smoke it with cherry wood. Also, to help keep the meat moist, I tent it and let it rest...

    I have some gorgeous pig wings that I want to smoke. Any suggestions? I was going to do a rub and smoke with 50/50 apple and cherry chunks at about 250F for an hour and then finish on the bbq with homemade sauce. I'll take suggestions!!

    Try mixin it up with a bit of each, I did, tastes wicked good! Afterward, I spread it with a sweet n savory style bbq sauce (not too sweet though!) and it was good!

    Ah cheers bud! Trust the probes, I made the same mistake too. Just read up on proper probe placement and you will be good to go. Nothing like hot toddies and some cold weather to boot :)
