    Yeah, I talked to the butcher at the local HEB and theycan cut me longer ribs, which is what I really want. Few more rib smokes and I'll get a brisket.

    Beef short ribs. Lot of work for so little result. But goooood. Next time I will get the longer cut ribs. Used Fiesta Brisket Rub with some Oak and Pecan wood.

    That's what I started to suspect. 'll try in a few weekends. This weekend is beef ribs. I nshould getvac offset smokler sometime soon. That weber kettle is small.

    Over the past few weeks I have smoked a brisket flat then a point. The flat cooked hot, my kettle didn't want to drop vbelow 300f, so I did fast and hot. Did not wrap. The point cooked normal at 250f with a couple of spikes that I corrected and wrapped at about 160f. Both times I had water...

    I use some bricks to hold my charcoal. I use the Kingsford in the blue bag. I don't have the discipline for the ring either. Finding out today getting a brisket will depend on if stores are open.     To celebrate getting through Harvey (Mov ed from Austin to Beaumont) and my Longhorns first gAme of the new season, I want to smoke a brisket on my kettle. Not getting a big brisket, just a good smaller one. Whats the best way to layout my coals for this?

    Not going to wrap on this one till its out. I've been hovering aid around 155-160 for about 3 hours now. I did turn it and spray it down. No opening again till ready.
