I have a half pork leg. About 6-8 pounds. I would like to smoke it and make pulled pork sandwiches. I have a Bradley smoker and plan on using applewood smoke for it. But other than that I need help. Can someone guide me on the rub? Time, temps, and whole process. I am a rookie.
New to the Forum here! I'm up here in Saskatchewan and I am pretty new to this whole smoking thing but want to do more. I currently use a bradley smoker and mainly do ducks and geese. Looking for recipes on all kinds of goose jerky and smoking duck roasts!

I have a bradley smoker and I have done goose jerky before, but by way of grinding it and using a jerky gun. I would like to also know how to make goose jerky by just slicing goose breast and making the jerky out of just the slices. So I am just looking for some advice or recipes...
