    Yankee, thanks! I invested in a LEM motorized 20 # stuffer, best investment I have made in a while. Now I don't have to rely on my short wife to struggle helping me or trying to coordinate a friend coming over to help.

    Assume this is the new 2.5 gen? I got one a while back and had the same issue. Called MB and they sent me a new controller. Havent had time to install it yet but they said the new controller should fix the issue, this was prior to xmas. Will try to install it soon asn see if it actually works.

    I usually only use mine for 20 pound batches, sometimes 10 pounds, but yes you can mix smaller batches. I believe mine is a Weston.

    I don't think it's that hard. I scrape out as much meat as I can get then just spray everything out with my kitchen sink sprayer, comes out easy.

    I have a 20 # mixer as well and add cheese in all the time with no issues. Just did 50 pounds of SS, 25 plain and 25 with pepper jack. Never added peppers but cant see any issues with it.

    My last batch I did was LEM brand seasoning, I could really taste it the day it came off the smoker. But agree as others said, a day or so in the fridge makes a difference with smoked food. My pulled pork always tastes more smokey a day later after its been in the fridge. This SS is spot on...

    I cut up into smaller portions and vacuum seal it up and freeze. I have had stuff in the freezer for 6 month and never notice a different taste.
