I found a nice 8lb rib Roast for 4.99lb so I jumped on it having no idea when I can smoke it .I need suggestions on how to prepare for freezing and how long before I need to cook it.

Just remember that the Highlander is considerably smaller in cooking area than the Longhorn. 1060 si
compared to 874si of cooking area. Of course it's lighter and takes less space as well.
Got my nomex from Amazon.Good stuff,easy to apply .Applied to smoker chamber and FB doors .No more smoke leaks.Will see how it holds up especially around FB.Thanks for all the advice on this

Finally got my convection plate this morning from Horizon after 4 weeks.FedEx man commentd on the pkg weight. I just smiled and thanked him,figured he didn't have time for an explanation of what was in the box.Dropped it in and fits nicely.Will fire it up later.For anyone ordering from Horizon...
