i brined according to a i read then i rinse the turkeys pat dry i think but now i want skin to dry more so i planned on leaving them out for about 3 hours before putting on grill/smoker is this ok ?

Since I got et-735 I have had a lot of problems keeping probes connected also I can't be more than 15 feet from it now one probe reading incorrect . Plan to try I grill 2 because it can see 4 probes also company does not email back will try calling them on monday

i was cleaning my deep freeze found four trout still in store packaging must have been there for 2 to 3 months
we no longer put meat in freezer without vacuum packing becuase of this lost some good meat from freezer burn
inspecting them they had no freezer burn i would like to smoke them ...
