    Puyazo????

I have been trying to figure out what this cut of meat is. Here in Honduras it labeled as puyazo which I thought was Tri-tip. I think I now have found out it is actually Top Siroin Cap or Rump Steak.(all these cut names get somewhat confusing as many of the same cuts are called different names)...

16.3 lb chunk of brisket - HELP!

This sort of thing has been very hard to come by.  Here where I live I can only find grass feed beef with very little fat and even then brisket is far and few between.  My wife was able to find this 16.3 pound chunk-a-love in San Pedro Sula through a good friend and it looks like I have a great...

first brisket on my new mini

it began about 11:15 Am now 2 hrs in and holding around 220* w/158* internal. I had to move the mini into the shade an hour ago. Found the temps varied 10* when the clouds moved in front of the sun. Much more consistent now.

Fired up for a Mini build

Been on a mission for several weeks now.  Quick background...I've lived in Honduras over 3 years and counting. Most things here run 1-1/2 to 2 times the cost as compared to the US. Was in the US recently on a 6 month furlough and a friend of mine who smokes (fellow displaced Texan) got me got my...

Smoke Hollow 4 in 1 vs Char Griller Trio

In all my research, I know this is a much asked question.  But I have a somewhat unique situation in that I live in Honduras and my options for a decent smoker for a newbie are limited.  I have been leaning towards a Char Griller Trio and shipping it down.  I found it online for about $534...

    intro

Hello. John Clow here.  I live in La Ceiba, Honduras.   I have been wanting to take up smoking meats for a while and decided it was time to quite using 'no time' as an excuse.  I have been doing simple stuff with a cheap charcoal grill and hickory/mesquite chips I found in a store here. I am...
