    Yep, some of my best chili has been mostly done in the smoker. I'll soak my beans overnight, toss them in the next morning. I'll do my peppers and meats as well, pick up a pound or two of alligator meat, you'll LOVE it in your chili after smoking in it's juices for a few hours! I've not tried...

    I used my MES 40", amazn pellet box, and tried using mesquite pellets. I'd run out of butter months ago, and last of my cheese is in the fridge. Thought it was a good idea to utilize the rare cool night, and keep me going for a while longer. Got some bread baking now, and will share the butter...

    Night before last, got down in the 50's at night. I tossed 10# of cheese and 6# of butter in the smoker.

    Smokin' for Tacos

    I experimented a couple weeks ago, and took taco seasoning packets and tried to inject into a butt. I didn't realize there were so many chunks in those packets, so it was tough trying to not clog up the injection needle. It gave a pretty good flavor, but next time I'll try to mix up the spices...

    Smoked ham recipe?

    I've wet brined a picnic shoulder for two weeks, and then smoked it. One of the best hams I've ever had, period. I can pick them up at WalMart for under $2/lb, and well worth the experimenting.

    I never wrap either. Both cooked low and slow. I haven't used sugar on my food since junior high, so I don't have thick bark problems.
