Love my MES 30... it’s an early first gen... I cook for 2 people... It was cheap and I was a newbie.. I have an extra element and extra control panel... control panels are 29.99 from Masterbuilt...
If I was just starting out now, I would by the MES 40 2.5....
Then have a WSM or mini WSM with IQ...
smoked some BBR from the rot pile in the ole MES 30... basic rub...3 hours smoke on 275 with apple chips, charcoal, and hickory pellets...Took them out at 4 hours...no foil...nice pull...nice chew...started with vinegar and water in pan...
MES... No matter what anyone says, I guarantee you are not going to spit it out.. buy one used on the cheap...they are great for cold smoking or keeping heat out of the kitchen during summer...
Set and forget with button pushes, older MES 30 on high with a mix of charcoal, chips, pellets along the way. Pull chip loader out a half inch..
WSM also set and forget with IQ130 after you get it goin tho.
Cooked these on WSM for 4 hours uncovered today. Nice pull.

Color was light. Reminded me of pork belly or super juicy pork rinds on steroids. I used a very light coating of rub. Also light smoke. I wanted to taste the pork this go round. Bone pull was nice speckle and not solid white.

Yes sir... Very flavorful and still juicy ribs. You could tell all sides got the smoke and dry rub...I was surprised they didn’t dry out... mock tender steaks next, I suppose.
Found some individual cut baby backs in the rot pile at the store. Smoked them in the ole MES 30 with apple chips,small charcoal pieces,and hickory pellets. Put smoke on them for only 2 hours at 275. Then I didn't add anything for the next 3 hours at 225. No foil. Sprayed with vinegar first 2...
After I got her fixed, smoked these baby backs individual cut. Mix of small charcoal, apple chips and hickory pellets. Sprayed with vinegar every 30 minutes first 2 hours. Only put smoke on em 2 hours at 275. Then 3 hours at 225. No foil. Internal was around 200.
My ole MES 30 20070910 finally quit heating. Took off the little square plate on back of smoker to access element. It has a gasket. One flag was toast and had burned thru gasket. Simply replaced the flag and she’s back in business. This has been a very reliable smoker. Just keep the control unit...
I don't fire up the ole mes 30 much since I built the mini wsm. It gets mostly ribs.
I decided to smoke some chili today to eat tomorrow. I'm using some maple sticks out of the yard with a little charcoal for smoke. Set on 275. :drool
