Here is an update with pics and final product. Took them off at 1:15 am with an IT of 165º . Double wrapped them in foil and put in the oven @ 250 until morning.

I may be over thinking this but I am going to be smoking two pork butts in my MES30. Does anyone do anything to prevent drippings from the top Butt as they will be on different Racks? Or is that just more Flavour to the mix?

It sounds like you have a long, but well worth while day a head of you.. I would expect at least 12 hrs of smoking but probably more. What I have done in the past to help it along is Smoke it until IT reaches 165° and then double wrap in foil and put in roasting pan in oven at 250° until IT...

I have followed Meowey's Instructions and has worked out perfect every time... as far as your Temperatures are concerned...I would heavily agree with ChefJimmyJ
and not trust your stock lid thermometer as they are highly inaccurate. Good Luck!!.
