I made an Excel spreadsheet on measuring the temps every five minutes, for 2 hours. Once it got up to temp, which took almost half an hour the average temp was 239. It got as high as 264 and as low as 215. My first question is does the time that it takes to get up to temp effect the 2-2-1...
I have a Number 2 Smokin-it. Their controller is expensive and actually more than I need in that I already have a remote temp probe. I am just thinking it might be nice to control the temp more accurately.
I rinsed it before washing it and it is the same temperature that I do dishes. I have a friend that is a retired Health Department Inspector that I will get his opinion on.
I brined a chicken yesterday in a 2.5 gallon Hefty bag (a neat trick I read on this forum) and instead of throwing it out, I turned it inside out and threw in the washer with a load of clothes. I let it air dry and Voila! Almost as good as new. I think I should be able to reuse it numerous times.
Thoughts on electric vs. propane. Can you put wood chunks in the fire box or does it have to be chips? How about brisket? The 16 X 14 seems a little small for brisket.

I have been cooking my Thanksgiving turkey in the oven for years at 170. It takes twice as long, but the meat falls off the bones, is very juicy and I cook it uncovered without basting once.
It would appear some prefer jelly roll style and others just wrap the sausage with the weave. Can anyone tell me the benefits of either style as I am getting ready to try my first one on Wednesday.

I like Jeff's also and Sweet Baby Rays and Curley's. I believe Curley started making his sauce in the 50's in Winfield, KS. He has long since passed on and it is corporate made now. I have never tried anything but the original and I really like it.
