    Pulled pork and Twinkies

I finally made Texas Twinkies. I didn’t have brisket or chorizo to add to mine so I used some pork butt instead. Pork butt and applewood for 14 hours, Twinkies added last 3 hours. Used Jeff’s BBQ sauce and my Cajun based rub. So good with potato and macaroni salad. Lots of leftovers for later in...

    Turkey

Done. I reside in Vancouver, WA. While most of the country is shivering with snow and ice, we are enjoying some crazy short pants weather with our good friend, Mr. Sun. Cleaning a commercial turkey for me means, rinsing the cavity, removing any feather bits that remain embedded and basically...

    Turkey

I finally got around to my first attempt at a smoked turkey. Cleaned the critter and  tossed him into an ice chest with 30 pounds of ice, a gallon of cran-apple juice, and made a brine with salt, sugar, oranges, red onion, celery, rosemary, thyme and sage. 18 hours later, I pulled him out...

There is enough left for one more meal for me and then it will be time to start planning the next meat adventure. Not sure what I will use...might try another leg of lamb. I will probably make another...

    July 4th Success

I gave it a shot with an 8 pound Boston Butt. It came out marvelous, even my wife enjoyed it and she is a very picky eater. Injected with apple juice sugar and salt, rubbed with sugar (brown and white) paprika, garlic salt, kosher salt, chili powder, cayenne, cumin, black pepper, all the good...

    New Guy in Town

Finally got an inexpensive smoker and will inaugurate the bad boy on Thursday. I picked up a 8.25 pound Boston Butt for $14 and will begin the dry rub process on Wednesday in preparation for the Thursday hotbox. Plan on trying a couple smoked burgers for lunch in the process while waiting for...
