Nice thanks for the tip using foil on the latches. I thought it had a little slack there. Been having fun grilling steaks chops and burgers on it so far and playing with the dampers.
Looking forward to my first smoke. Only have to decide between couple butts or ribs for my first attempt.
I have never hung ribs on a rack, but did get a rack for my new Akorn to have if needed.
I will always lay flat on the grate, only time I will try the rack is if I am doing so many I absolutely have to use it to get them all on.

Got a new Char-Griller Akorn Kamado recently, and going to be trying my first smoke on it here in the next few days.
We downsized and moved, and had to get rid of my Oklahoma Joe due to space constraints.
I have been smoking ribs using Jeff Phillips recipes for the rub, and love...
Question for you guys, how many racks of spare ribs should I be able to fit on this Akorn?
I am thinking 2 may be about all I will get on there, perhaps 3 if I push it utilizing the top rack that sits above the grate as well?

Just to clarify when I fill it up with the lump charcoal does it actually rest on the edges against the bucket or do I need to just build a pile in middle on top of charcoal grate?

So I recently became disabled and retired a few years sooner than planned, the wife and I have moved and downsized. My Oklahoma Joe was just too bulky for our new home, so I have sadly gotten rid of it and recently picked up a Char-Griller Akorn Kamado grill and smoker.

Fwiw, I ordered a custom convection plate from Horizon for my OKJ offset - the way the made it, it just sits down in the barrel of the smoker butted up to the wall and works fairly well. Yes it is bent with a 45 that goes up and then flat out to the wall. But it just drops right into the smoker...

Like others I too have only used the rub so far, have yet to make the sauce but I plan on doing so.
Last smoke I did was a boston butt - my first - for pulled pork. Loaded it with the rub the night before, and man oh man was it good - especially that bark - addictive.
