My Maverick is registering the BBQ temp as 250. Of course, that affects my smoking and I'm wondering if there is something wrong with the maverick or my rectec is not registrering temp correctly?

The turkeys were a success. I took your advice and didn't smoke for too long. I did 3 hours at 225 and then the rest at 325 . Had a nice brown skin, could have had a bit more smoke flavour. So at least I know I can go a bit longer for the smoky flavour. The turkey was nice and juicy, even...
BTW, I did a pork butt today to christen the RecTec. Didn't do it for pulled pork. Put it in at 225 at 1 PM and it was ready at 7 PM. Nice and juicy and OH so tasty!

We just got our new RecTec. Canadian TG is in october (I live in the US), but I am doing it early b/c I will be crazy busy in October. We have 16 people coming over on Saturday. I have 2 - 15lb Turkeys.

Were yours baby backs? I have the same issue. Bought some at Sam's... they say Pork Loin Back Ribs.
Don't know if they are considered baby. They are not as wide as regular spare ribs, but they are considerably thicker.
I have some back ribs that I got from Sam's. They say they are Pork Loin Back Ribs. No mention of Baby Back. Do I use the 3.2.1 or the 2.2.1? They are pretty thick in some spots.
Also, I will have two on each of the three racks in my MES. Will that alter the time if it is full?
