    Stand for Amnps?

May I clarify the best location for an AMNPS 5x8 in a Gen 2.5 is directly above the heating element on the right side above the existing chip tray? the pellets won't ignite from too much heat there?

    Muscovy Ducks

I have an urban farm in the west San Fernando Valley of Los Angeles, where I raise ducks (and a few chickens and rabbits).  They had a busy spring and now I have about 50 adults that will be being butchered soon.  I'm not a USDA inspected farm so I won't be selling these commercially, but feel...

Dehydrating Garlic.... A new method to peel the cloves......

Anyone ever try using the dough paddle in a food processor to peel garlic?  I will try it when I get home but Dave's mixer trick inspired the thought.

    MES 40 Overheat - FIXED

This would seem to be the right place to bypass the onboard control if you were adding your own PID controller w/relay (like HeaterMeter?), but can anyone experienced in this confirm that guess?

    Alternative to the mailbox mod

Couldn't you have used the top vent to connect your pipe, since air intake could come in thru the bottom vent?

If someone is truly on the paleo/primal kick, sugar and maple syrup would be out for them as well.

By the time I was doing chickens, I didn't have time for pictures, but I spatchcocked two and left two whole, brined them all in SLaughterhouse recipe found here, then air dried in the fridge for a day.  Smoked a spatchcocked one with the ribs and put one whole over the cajun cooker on a...

The ribs were a different story!  I've been cooking ribs a few years now, on cheap offset smokers, on weber kettles and now in the MES30 with AMNPS.  3-2-1 was just right, rubbed with BigMista's Perfect Pork rub then added some apple cider when wrapped in foil. 3 racks went fast!  There's the...

Summary:  fantastic weekend! Brisket:  needs work but not back for first time.  Put it in late on Saturday, took it off at 2am.  Reheated it next day but could have been better.  Not sure I will bother often, too much effort for minimal payoff.
