    O.K.  I'm sure that's what it was.  I didn't even know that "too much smoke" was possible.  I had white smoke billowing out of the thing.  How do I get the right smoke and how much wood should I use?  If the wood starts on fire, is that a problem? Thanks,  Joe

    Char Diamonds have worked out fine so far.  I don't think there is a huge advantage from a heat sink perspective but it'd definitely easier to clean up.  I just use  a shop van.  I generally just use chunks of wood directly on the diamonds.  It can get a bit tricky to avoid the elements...

    Did my first ribs on my new Brinkmann electric today.   First time using big wood chunks too.   Couple things - Added too much wood at first and had a big flare up, ribs where tasty but a bit dry, I think that could have been why - 45-50 degrees today, keeping consistent heat on this bad boy...

    Well, I was intending to just replace the element on my Brinkmann gourmet but ended up with a new one.  The WSM will have to wait a while.    Anyways, rather then using the lava rock, I decided to upgrade a bit and look for fire bricks.  No dice at HD.  But they did have these "char diamonds"...

    Brinkman gourmet electric - need a new cover

    I need to replace the cheap vinyl cover that came with this smoker, any recommendations? I was looking at the veranda round but not sure it will fit. Thanks!
