    I just did a cheese smoke today where I thought the temp would stay under 75, but ended up going to almost 90.  I couldn't keep the temp down with ice, so I pulled the rack with the cheese on it and stuck it in the chest freezer for an hour then back in.  It wasn't ideal, but it worked

    I smoke the meat before adding it to the chili. I separate into 1/3# balls and smoke at 225* for 2 hrs with hickory then crumble into the mix. It adds a huge amount of smoke throughout the dish

    my XL, I run the probes through the wide open vent on the back. They'll reach any of the racks if you set the transmitter on a block of 4x4 on top of the smoker so it doesn't get hot enough to melt the plastic.

    Doing my first fatty today. Pretty simple; just a pound of hamburger, some cheese, ketchup, & mustard, wrapped in a bacon weave. As long as the smoker was going, I threw on some beef and bambi burger for chili and spaghetti later this week .

    Unwrapped and coming up to room temperature.  They didn't freeze last night, but they sure are cold!  Gonna go out and fire up the XL here in a little bit.
