    Josie,  thems some SWEET sausages. Like to see that recipe too when ya get to it.  MikeW, thighs make some GREAT sausage. Based on my experiences in US i didn't even need the skin. just the meat by itself had plenty of fat.

    carlo, beats me on the drum safe to cook in. that'd probably be a good one to propose in the UDS section further down on the forum. Or draw up what you want built and find a good fabricator.  for now, i have close to 80lbs of hickory pellets and 40lbs or so of mesquite. that is our favorites...
