    Chuckie has stalled after three hours of smoking, and at at internal temp of 151 degrees.  Moved it to a pan, added veggies, a splash of beef stock and wrapped it up in foil.  Then back to the smoker!

    An update... I just put the ribs into the pan (apple juice and Squeeze Parkay) for braising.  When I checked the temp, the thick part of the ribs measured 145 or so.

    Update... the chuckie was pulled at 205, double wrapped in beach towels and put in an insulated cooler to rest.  Now it's time for smoked veggies: zucchini, yellow squash and vidalia onion; tossed in olive oil, fresh ground black pepper and Italian seasoning.

    Update... I absolutely LOVE the temperature control of the WSM!  I was able to drop the smoker temp to 215 which stalled the chuck roast at 162 degrees.  I held it there for an hour to let my times come back to normal.  Once the times were back to normal, I moved the chuckie into a pan and...
