Mine was delicious also. Done in 5 hours at 325 degrees. Smoking only during the first 2 hours with thin blue apple wood smoke. Nice pink smoke ring... and juicy & tender.
It's a bit nerve wracking to do a first time turkey on Thanksgiving day in case it doesn't work out.

I am also smoking a First Turkey today, on the smoker I got this past summer.
I attempted one last year on a gas grill re-purposed for smoking with marginal results but I don't count that one as a first because it was on a pretend smoker not a real smoker.

I do that with my Behmor also. Start it up for 2 minutes with the coffee loaded already, shut it off then start it up again and increase the time extender as far as it will let me... then stop it when I decide it is ready for the cool down cycle. 12 ounce measured coffee batch weight running on...

Yeah... sounds like you got good advice with that needle valve to more precisely regulate the flame. I am lucky in that my gas regulator will let me go to low temps as I am not into monkeying around with it. The idea of dual heat source is great. I hope you have luck sorting...

I will try out that smoke generator stick for cold smoking fish for sure.
I tend to take baby steps when trying something new so as not to waste money if it goes wrong but once I have my wings, I go for it.

This is interesting. I am interested in trying cold smoking and had gotten the impression from Googling on the net that one needed a special external cold-smoke contraption hooked to a normal smoker.
Now I have a very good reason to check out the AMNPS in all seriousness.
