Hey all. I just got a pellet grill. I've done the initial burn in and then 3 cooks at temps from 250-325.
Yesterday when cleaning it out I noticed paint bubbling and peeling around the outside of the firebox.
Is this cause for concern? I did a google search and have seen it mentioned before...

I too have experienced the same issue as you when using either the 3-2-1 or 2-2-1. Sometimes they came out really well, other time they were pretty bad.

I think so. Going to keep the temp in the 230 range and assume 3-4 hrs. I'm not going to spritz but will apply some sauce towards the end of the cook. I'll be using Stubbs briquettes with some hickory and cherry chunks mixed in.

Agreed. I've done it both ways and can't tell any difference either. The only reason I'm rubbing them tonight is becase I'm putting them on at 6am. I'm trying to do as much prep work tonight as I can.
I am going to rub down 2 butts tonight, , and let them sit in the fridge over night.
Is it necessary to wrap them tightly in plastic wrap or can I just set them in a pan or dish and cover that with plastic wrap?
