    I'm a cherry/pecan guy as well and definitely run the smoker at a low temp for maximum smoke. I've smoked at higher temps and they end up finishing way to fast. Dirtsailor is spot on in my opinion.

    Right on SRO. Glad they turned out good for you. I think my IT was 175 after 3 hours of smoking. From there i cooked them wrapped in foil for another 2 hours but I'm not sure what the finished IT was. They did have a texture like pulled pork which is what i was shooting for.
