    Rain Rain . . . oh drat!

We have a Masterbuilt 30" Electric with digital controls.  The unit is 4 years old and we love it.  Usually the smoker is under wraps in inclement weather and the digital controls are inside the motor home.  A few weeks ago the wind came up and we had to put the awing up.  Since rain wasn't in...

Has anyone played with the Alder Smoked chocolate chip cookie?

I saw this on the cooking channel last night and  just kinda went "wow"!   Their trick was smoking a whole bag of flour, because they made huge batches.  I would love to try this - but has anyone smoked flour?  Got any hints to share?  I think these would be fun little goodies for the holidays...

Porchetta from the smoker with Q-View!

Thanks all!  For right now the motor home is parked in Eastern WA.   Here's the last pork butt with our view.

Porchetta from the smoker with Q-View!

I apologize if this is a repost - couldn't find the original - Porchetta is something I've wanted to make for a couple years.  It's kinda hard - we live in a motor home and space is limited . . . but this last week the Gods smiled and the planets aligned - boneless pork loin was on sale, the...

    Questions about bacon cures

Thanks Dave! I think I'll keep  the new bag too.  Hopefully I'll have access to a huge empty walkin all winter and want to do some curing of sausages and making cheeses.  I have pastrami in mind, lots of goodies!

    Questions about bacon cures

Thanks guys!  I use a basic dry cure from Charcuterie - but I add a ton of black pepper, ground peppers, or even cocoa powder.   I have a scale that measures in grams too, I use it for "measuring" all the time. The bellies have skin on them - I usually smoke with the skin on. I appreciate all...

Porchetta from the smoker with Q-View!

I have been wanting to do this for a long time - but this week the stars aligned and pork loin was on sale, hubby bought some incredible belly, and the herb garden was WOW  Porchetta isn't usually smoked, but because we live in a motor home with limited AC power & in an area where the...

    Questions about bacon cures

I finally have some pork belly to play with - it's been a long long time (don't ask, but it involves living in a motor home) and I'm really excited.  Somewhere in our belongings I have some pink salt that I've had for about 5 years.  Last time I saw it it wasn't really pink anymore (I know it's...

Returning with a new id in Washington state - for now

Thank you all for the warm welcome.  We did a pastrami this weekend that was amazing!  I'm looking forward to finding time to browse - see if I can find some of my old posts regarding "fatties"!  I'm thinking it's fattie time!

Returning with a new id in Washington state - for now

WOW - I know I was here before, but couldn't remember my username (new computer) or password.  Since the last time I was here we've sold our boats, bought a mobile home in North Dakota (and wintered over 1 year), returned to Ca and bought a motor home.  Now all of our "stuff" has been in...
