Good therms are a must. But the built in is only about 1-3 Degs off, not enough NOT to use it.
Put the butt on last night bout 11:00pm and went to sleep, got up at 3:00am and hit the 140 in 4 no problem. turkey...

Some finished pics from yeterdays smoke and todays dinner. Pulled Pork samies.
Last nights bottom round dinner.
Todays pulled pork with finishing sause and creamy coleslaw.
We just had the bottom round for dinner, which was darn good for considered a tuff piece of beef. I wrapped in foil and set in the oven (OFF) for about 2hrs. Sliced about 1/2" and served with veggie and potatoes. Just checked the butts and still holding about 174-177.
This NY weather is good for doing some smoken. not good for any winter sports thats for sure... I'll smoke anyday day instead of shovel snow....LOL

Pulled bottom round at 155 and foiled. The butts are stalled at 168 set at 225. From what I read about meat stalling is... "DONT TOUCH THE TEMP"... wait it out.....

Ok, got a good deal today and picked up 2 pork butts (5-6lb each) and 1 beef bottom round (4lb).
I just love dusted them and in the fridge.

When I purchased mine from Lowes I also was missing the 2 screws for the digital timer/heat setting unit. I just called MB and they sent out 2 right away.
