    Labor Day Beef Ribs

    I did some beef ribs for the first time on Labor Day.  Basic 50/50 salt & peper rub.  I smoked it on my UDS with the 3-2-1 method at about 250 degrees (where my drum likes to run).  The last hour I coated it a few times with Sweet Baby Rays.   It turned out fantastic!  Nice, juicy and tender...

    Yeah, it's worth it.  It is soooooooo much better.  My kid (2 years old) will only eat my bacon, not the store bought stuff. :-)

    Prime Rib for Saturday

    Thanks for all the positive feedback!  The prime rib tasted great! @traval.  I'm from the GR area. @RedRing. I pretty much took the prime rib straight from the refrigerator to the smoker.  I don't remember how much the ribeye weighed, but it would be nice to know how long it took per pound.

    @whistlepig I used apple wood to smoke.  My wife isn't a huge smoke fan, so I generally stick with something a little more mild.

    Well here is my prime rib.  It came out awesome.  I smoked it at around 240 (my UDS likes to run there). I started at noon and it took just under six hours to smoke. I pulled it at 134 and then wrapped it in foil and a towel to let it rest for 30 minutes.  The Au Jus was great and tasted awesome...
