To trim or not to trim is the question when smoking briskit or pork shoulder is better to trim.
I never had trim brisket or soulder,but I am thinking about trimming the fat cap.
Can you let me know your experiences are with this.

,I have always used water in my smoker do you find that you better results and do you let charcoal get gray
or befor closing up the smoker...
Al grate job I have I have a smw to I have 3questions
1ST looks like no warter in your bowl.
2nd Is your smw an 22.5 inch.
3rd did put just a little bit of hot coals on top.
I always let the brisket set out for a couple of hrs befor putting on the smoker,cris cross cut the the cap and season and let sit I always use wholr packer...
