    To trim or not to trim is the question when smoking briskit or pork shoulder is better to trim. I never had trim brisket or soulder,but I am thinking about trimming the fat cap. Can you let me know your experiences are with this. thanx

    Al thanx for getting back to me , I got just two more question, you got me thinking  why sand and no water ,I have always used water in my smoker do you find that you better results and do you let charcoal get gray or befor closing up the smoker...

    I always let the brisket set out for a couple of hrs befor putting on the smoker,cris cross cut the the cap and season and let sit I always use wholr packer...
