    I'm back!

I joined a little over 10 years ago, but I've been absent due to a bad marriage and her getting EVERYTHING, to include my Traeger. Things in my life are much better now and I just received a RecTec RT700 from Santa. Looking forward to getting back into smoking and outdoor cooking after about a...

**Help** First time smoking for a crowd.

As it states, this is the first time for me cooking for a crowd, and not sure how much I need to do. The gathering is a "wake" for my wife's Aunt that passed away yesterday and I have about 35 people that I need to feed some PP Samiches. Problem is I don't know how much I'll get from each pork...

First Smoked Cheese with "C" View

Thought I would share my first attempt at smoking some cheese.  Started off with 7 different kinds just to see which one's I would like the best and then go from there.  Smoked with the AMNPS for 3 hours with Apple and Hickory pellets and I think it turned out pretty good.  The only thing I...

    Leftover Brisket Chili! With Q-view

Had some leftover brisket from Christmas day and needed to do something with it so I fired up my dutch oven and made some chili.  I used my competition bean chili recipe and just cut back on the ground pork and added my brisket left over from a few days prior. It turned out great!  Too bad I...

    What do I have here?

Little background I guess.  My mother in law said she would supply the meat if I would smoke it for Christmas lunch.  She was going to get "a" brisket and some turkey breast to put on my MES.  She show's up with the brisket and this is what I got.  What am I up against, I've only smoked a few...

    2nd Brisket with some Q-view

Smoked a flat yesterday and it came out pretty good.  My best so far.  It hung up at 150ish and I just kept trucking.  Wrapped at 170, off at 200 and then wrapped in an army wool blanket in the cooler for 1.5 hrs.  Not quite as juicy as I'd like, but man was it tender! Not great pics, but...

Hello all from Nebraska.  I have been smoking for a few years on the Smoke N Pit and I am about to start a build.  I found this site while looking for ideas.  So I'll be asking some questions!  I actually just purchased my "cooking chamber" yesterday and I am anxious to get and "idea" as to...
