HAHA, how are you all doing??? Well the last 2 briskets won........both, after very long stalls, and family and friends complaining of hunger, ive had to take them off before I wanted. They had great flavor, just were not as tender as I would like.

I put tooth picks along the grain so I can tell after its cooked. Also, its kind of interesting to see how much a piece of meat/the grain will warp and twist after a good long smoke....
I am new to this as well, and have wondered the same things. For me, I use a mix on my yoder sfb. But it has 2 grates in the box, I start with 1.5 chimneys of hot coals on the bottom grate and I but the chunks on the top one, as they burn out they get moved to the bed of coals and new chunk goes...
Hey All, just wanted to show off a little bit......My Wife and Family went in toghether to get a Yoder Smokers 16" Cheyenne for my birthday!!!! I have been eyeballing this for about 6 months!!! I cant wait to get some tasty cow or pig out of this thing!!! I was actually planning to do a brisket...
Done.....thank you for all the help!! Came out pretty good I think. I have a house full of full bellies and heavy eyes!!! Also heard a few oh daddy, this is soooo good! Used the finishing Sauce from the pork sticky and my wife made the dipping sauce from her grannys cook book.
