My Plan for pulled pork (2 -9lb butts), now with Q-view

Had to re-light my pellets at 6am. Other than that, everything seems to be going to plan. Pics at 8am:

My Plan for pulled pork (2 -9lb butts), now with Q-view

I got them in the smoker about 10pm. About an hour later than I wanted. Took the meat out of the fridge around 9. Preheated smoker to 245°. Lit my hickory and cherry pellet mixture, let it burn for 10 minutes, then blew out the flame and put it on the bottom rack. Smoker is set at 230° and...

My Plan for pulled pork (2 -9lb butts), now with Q-view

On Friday night, I covered these in mustard, then covered in rub. Got the rub from my local meat market: Both rubbed and sealed with saran wrap. Placed in fridge for 24 hours:

My Plan for pulled pork (2 -9lb butts), now with Q-view

Sorry about that, yes, it is for pulled pork. I'm thinking about preparing it in advance.  I know it reheats excellent, but there's something about eating it that day....

My Plan for pulled pork (2 -9lb butts), now with Q-view

Hello, It's been a while since I've smoked anything or I posted, so I'm trying to "re-learn" everything and read through all the stickys to make sure I've got everything down.  The last time I smoked, I had bought the "new" A-MAZE-N sawdust tray...and now I just upgraded to the pellet...

    MES 40 Stalling Problem

Well, to sum up a few questions. I will try to test both temperature sensors again.  I'll try to verify that my "external" probe will hit 212* when boiling water.  Maybe something has changed.  Is there a better way to test/calibrate the thermometers than that? I do usually check the temp...

    MES 40 Stalling Problem

Hello, I have an MES 40 20070311 that I bought last year.  I seem to be having trouble smoking meat to the correct internal temperature.  It seems no matter what I do, I get a stall and can't finish the meat without seriously cranking up the temperature or finishing it in the oven.  I have 2...

    First Smoke...not so good

I have two external thermometers (an oven and a digital meat probe).  I put them both in boiling water. The over said 200 in boiling water, the digital meat probe said 211.  When placed in the MES set at 225, the oven said 210 (ish)...that's about the same % off as my boiling water test....and...

    First Smoke...not so good

So, I tried my first smoke on Saturday.  I just bought the all stainless MES 40" from Cabela's and preseasoned it on Friday. I read the 5 day E-course, purchased Jeff's recipes, and decided to follow the "pulled pork sticky" from the forum. I had bought an 8 pound pork butt and seasoned and...

    Hello

I've been lurking on here for a few weeks now. I've been researching smokers and reading all the helpful advice. Finally decided on the MES 40" model 20070311 and picked it up last night. Next purchase will be the A-MAZE-N smoker...probably the 6x8. I've never smoked anything before, but I...
