    I just ordered my MES 40 from Sam's, should be here next week, just in time for Memorial Day.  I upgraded from the the analog model.  Just a quick question for you guys, do the newer models come with the larger chip pan or will I have to call and request it?

    You can stick electrode weld SS as well, just isn't always as pretty no matter how good you are.  Like what was mentioned before, choose the right fill metal.  Best bet is to contact the manufacturer of the steel.  If, like I suspect, it is an austentetic 304 SS you should be able to use any arc...

    Check the specs on on the SS but it should be pretty strait forward to weld.  If it's 304  SS, you should be fine.

    Do you have to brine a turkey?

    You hit it right on the head cliff,  it seems harder everyday to find really any meat that hasn't been brined.  I go strait to the slaughter house for the majority of my meat anymore.  I'm beginning to think producers will do anything to extend shelf life anymore.
