    My New Mini WSM

    You guys are all right, these Mini Wsm's are great.  I can hold temps anywhere from 225-275 all be adjusting the vent.  Put 3/4 of a unlit chimney with 20 lit briquets  and its been going for almost 9 hours and still going strong.     I said it once I'll say it again this Smoker ROCKS!!!!!!!!!!!! Smoked a 10lb packer at 235-250 for 6 hours until 200 internal temp.     How much Smoke?

    I smoking a brisket right now and sometimes I get good billowing blue smoke and sometimes I'll get thin puffs of smokes.  Does that matter in how smokey the meat will be or as long as I stay blue all is good.

    Thermometer in Weber Kettle

    I'm thinking of using an 2" Old Smokey Thermometer on my 22" Weber Kettle but I'm worried that I might ruin it since it only goes up to 475F.  Do you guys think I would ruin it or would it be fine once it goes down when I do smokes in it.
