Smoke my first pork butt, what a disaster!!!!, Please help

Regarding thermometers:  I can't stand the manual ones with a dial.  They take too long to get a reading.  I have a digital remote thermometer with two leads.  One measures the air temp inside the smoker and the other stays in the meat while I'm cooking so I know when it's nearly done without...

    WSM Update

I have a WSM myself and love it.  These things make smoking about as easy as it's going to get without hooking up gas or electricity.

Smoke my first pork butt, what a disaster!!!!, Please help

From what you described it sounds like you just didn't cook it long enough.  Every butt will be different, depending on its size and composition, but for me it generally takes around 15-18 hours to cook a pork butt (7-8 pounds).  If you were opening the smoker every 45 minutes to mop it then it...

My first pork butts - with Q-view!

I posted this a while back on another forum, but thought people might enjoy it here too.  This is the first long smoke I ever did. I'm using a Weber Smokey Mountain.  This was a couple of years ago.  I'm a little better now, but still by no means an expert.  I hope everyone enjoys laughing at me...

Year old frozen ribs and hot links

Thanks for the advice everyone. My only defense is that our baby was born around the time I bought the ribs.  They went in the freezer, I went into new baby survival mode, and the next thing I know it's a year later.  I know it doesn't completely excuse my negligence, but please don't take away...

Thanks Cowgirl!  I'm sure I'll take you up on that when the time comes.  I love your blog, by the way.

How much of a difference does 250* vs. 300* make for poultry?

I'm trying to choose between two different electric smokers.  One will adjust up to a top temp of 300* while the other will only adjust up to a max of 250*.  I plan to cook a lot of chicken and some turkey on this thing.  How important is the capability to get up to 300 instead of 250?  Will I...

Vertical or horizontal size more important?

I'm shopping for electric smokers and have narrowed my choices down to two that are around the same price.  One has a narrower but taller cooking area, one is wider but shorter (less space between racks). Smokin Tex 1400: grates are 14.5" x 14.5".  Cooking area is 17" tall (can be split up in...

    New guy from Oklahoma

Thanks everyone!   That's actually where I got the idea!  I've been really interested in pond management for quite a while.  Raising shrimp in fresh water in Oklahoma never crossed my mind until I read about it on Cowgirl's site.  Now I can't get it out of my head!

    Fattie Pistons

I first learned about these on Cowgirl's site.  I've been meaning to make one.  I went ahead and ordered one of these so I'll actually have one in my hand and not on my to-do list!

    New guy from Oklahoma

Hi everyone!  I've lurked on this forum on and off a while and finally decided to join.  I'm in Oklahoma, just Southeast of Tulsa.  By day I run an Internet company and by night I chase my kids around and try to keep the smoker going.   I've been smoking for a couple of years on a WSM and love...

Year old frozen ribs and hot links

They're in the top of a fridge/freezer combo.  Not sure of the temp in there, but they're frozen rock solid.  Now that I look at it more closely there are some ice crystals on the ribs under the packaging.  I'll toss them.  No ice crystals on the Hot Links and I'd imagine they're loaded with...
