    I used Meathead's Memphis Dust. It was really good. I don't know I will change anything next time. We really were very happy with these ones. I want to try to do some other stuff though. May smoke a steak for an hour or so before grilling. Thinking of doing a brisket at some point...

    Thanks everyone. My wife's comment was "You can do this again tomorrow." Of course I did all the cooking. I even made salads to go along with the ribs and beans. I don't know how much of a part that played in that decision.

    For smoking I used the Old Smokey Electric smoker. It seemed to work fine. Next time I will line the drip pan with foil! They say not to use water because it's a sealed unit. The stuff in the drip pan really burned in and I wonder if that had an effect on smoke quality. I don't think I put...

    Well I'm finally done cleaning up and all from our first smoked dinner. Had spare ribs and Dutch's Wicked Baked Beans. Made my own sauce also. All turned out well. Here is some qview. Not the best photos, but we were too busy enjoying.
