    First tri tip is on!

Great lookin tri-tip. I am overjoyed to actually see someone post a picture of a Tri-Tip that has been cut against the grain, Most cookers do not realize how important that this step is. Keep on cookin----the more tri-tips that you cook---the more you will appreciate keeping it simple.

Forgive me, for I have sinned..

With a Camp Chef "Ultimate Dutch Oven" there is an inlet for smoke to get in while cooking on the dutch oven over coals. Then the results are the best of both worlds---basically a dutch oven smoker

    First Tri-Tip qview

Glad to hear that it was tender------if it was sliced against the grain it would be MORE tender. For your own enjoyment try cutting the next one perpendicular to the grain. I am not trying to be a smart a$$ just want you to have the best that is possible.

pulled pork sandwiches for 170 people

I would buy approx 85 pounds of raw product. Pork loses 40% to 50% of weight during cooking and fat loss. If you figure your weight loss at a maximum of 50% then you will have 42.5 pounds of saleable meat or 680 ounces. Most folks use 1/4 pound or a 4 ounce serving per sandwich. 680 ounces...

How Many People Can I Feed With One Brisket

When I buy brisket for a group I buy 1 pound per person. After trimming and cooking you will lose approx 40% of product. That leaves 2/3 pound for each customer. 2/3 pound is 10.66 ounces per person. Most people eat from 6 to 8 ounce servings---this will leave you with a little bit of meat which...

Chickens inside of a whole pig?

We do it all of the time, however not in a smoker. Our pig rottiessere is open because customers like to visually see the pig at parties. We are cooking at a higher heat and shorter time than a smoker. We stuff the chickens with sausage, then stuff 4 or 5 chickens into the pigs cavity and sew it...

    Head's up westcoasters,

$2.95 is not really a "deal" ---That is what tri-tips normally run. Last week they were on sale at Savmart and Food Maxx stores for $1.99. Cash and Carry Wholesale stores and Smart and Final Stores do not require membership, and are open to anyone. Tri-Tip at Cash and Carry today was $2.34 in...

new smoker, beef smoke, tri tips/ribs w/pics

Every now and then even a blind squirrel finds an acorn. More meat has come out off small offset smokers than big fancy ones. Glad you are putting this one to use.
