So far I have only cooked on the top rack of my brinkmann gourmet smoker. I would like to start using both racks since I am smoking anyway.
Which foods do better on the lower rack, which is just above the water pan?

I am going to get a fresh turkey if they aren't too expensive. The frozen free range ones were $5 a pound (ouch)!!
We don't have soil or grass here in Las Vegas, so I mix my ash (and coffee grounds) into the area where I trained the dog to poop, which is small sized loose gravel on top of the dirt. It helps to keep the flies away and the smell is not as bad.
Well the smoker is only 4 months old but Mrs. Al usually uses Easy-Off-Ready-To-Use-Oven-and-Grill-Cleaner, along with a sponge to clean the grates, if that helps.
I pureed the pineapple to avoid lumps. I would have used crushed pineapple but didn't have any. I thought the chunks would make it difficult or impossible to roll up. It tasted great though, and the turkey bacon came out a lot more edible than regular bacon, which can get rubbery.
Nice job as always!I am the one who put the cheese into a foil pie plate and then put that into an ice filled foiled pie plate. Next time I am going to try and cube the cheese and then smoke it so that it will be more smokey!
Time for a Hawaiian Pizza type fattie. This time I wrapped it with TURKEY BACON which made the bacon much less rubbery and much more edible and yummy.

So last week I was smoking some meat, drinking an adult beverage, and munching on some pistachio nuts. Mrs. Al came out to check on me and saw the pile of shells and said "can you smoke meat with those?"
I didn't know, so I did what I always do in these situations. Got out a chicken test...
I am relatively new to smoking and only have 6 months of experience, but I am sure there are others here who can answer your question. This was my first ever cheese smoke but certainly not my last!
