    I used beech wood for the smoke.. I also used about 10 pounds of charcoal for this cook.. Otherwise my day is spent feeding chunks of wood.

    I skipped the rub and the package pics. This has been in the smoker about 2.5 hours. I used a rub that I got from one of the members here. It is a six pound roast that I picked up for 2.88 pound.

    pork loin cooking time

    I have never done a whole loin. I go ahead and make my chop cuts and put a rub on each one individually. Then I smoke to 145° You can cut them with a fork. This way is much faster and I feel each cut has a bit more smoke flavor.

    To make enough heat. I would start out with more coals. I burn wood in my offset instead of costly charcoal.

    Instead of cutting them into .75 inch lengths. Cut them into 3-4 inch logs and splitting them. That is how I do my sassafras roots..

    Might be directly related to not enough fuel. I have the SNP but I use wood..I never have trouble keeping it at 225° or higher. But , like I said. I am using wood. The wood is cut and split into small pieces.
