Do you think that could work for lamb leg as well? I roasted leg yesterday, quick on high temperature. Was wondering if a long slow and low cook would work well on lamb it as it does for pork. Clearly did for you for lamb shoulder!
I've read different recipes for pulled pork, smoked for long hours, and left wondering what's the principle for the initial rub or mop sauce to keep the meat moist, but absorbing smoke flavors, without drying out.

I got a 590 in early July. Have grilled quick and slow smoked many times since, everything came out good, easy to use. Even smoked beans, which come out delicious as well. Broccoli also grilled well at 400ish, came out delicious.

Thank you all for the pointers. I ended up getting a Deck Boss 590, so far so good, was able to cook good tasting seared burgers, flank steak and also 3-2-1 ribs. Will keep this thread in my bookmarks and report a few years in the future about the longevity.
The rot is everywhere inside the cooking chamber. The grates are almost ready to fall into the chamber because the little shelf at the back that supports them has corroded and only about 30% is left. I don't think I do anything wild with it for this to happen. I've used it on average twice...

The introduction to nickel in 304 makes it a much more corrosion resistant grade than 430 however, it does make it more expensive...
Just noticed the Camp Chef Woodwind model has a stainless steel body. That might be the solution to what I'm looking for. It is somewhat expensive at $1200 for the 36" model.
