Ok as many know I have the MES 30 with the arbor pid- it works great - for 10 lbs or less.
I’d like to be able to smoke 20 lbs at a time. What would be a good step up and still use the pid?
Well said @mike243 –im not against any weapons….i just like the old stuff. Sometimes I use the new stuff too. Our rifle opens the 15th and I’ll be toting a .270 looking for this guy
I’m pretty old skool @Rafter H BBQ - I shoot a percussion .54 and a .32 for squirrels- but my latest toy is a gift from my favorite uncle, a Lancaster Co long rifle flinter that my uncle built in 78. Open sights and patch and round balls on all. Gonna try to get a deer or 3 w it this year
Plans changed again and instead of smoking the second batch today I did them yesterday. I’m pretty happy with them.
These are 1.5 lb chubs in translucent fiberous casings.
Hung room temp for an hour
In smoker with 1/2 full smoke tube at 140 for an hour.
Bumped smoker to 170 and took 8.5...
I clean my deer meat really nice -very little connective tissue and run it once through 3/16 and then it’s good for chili, etc.
A buddy of mine gave me some ground elk and it had 10% beef tallow in it and it was wonderful. I may try to do that for some of my own ground deer.

I usually stuff Deer SS in hog casings cause it’s easy to pack them on hunts and not have to slice etc…..just take a bite lol
But I saw those 1.5’s and thought it would make a classy gift for a few landowners where I hunt.
