    I just got a BGE for Christmas.  I did a couple pork butts the other day and only opened it to insert  thermometer probes.  In my opinion the bark ended up great with mops or anything else.   The Big Green Egg is the real deal. I love that thing.

    That is exactly how I do it as well. It usually takes me about 2 hours with a full loin. Maybe a little less. The pork is very juicy and tastes great. I usually wrap it in foil and let it rest for 45 minutes or so before I slice it.

    What if I didn't brine it, but just smoked it more like a picnic, but with more basting and only went up to 160 or so since it's leaner? I know it won't taste like ham and I will need to slice instead of pull... but will it taste like a picnic?

    I have the Chargriller pro. I have done the dryer vent mod, flipped teh charcoal tray to use as a baffle, and added an expandable rack in the firebox. Totaled like $40 of mods. Great smoker for the money.
