I still consider myself a NOVICE and I just assumed you never needed to clean the inside. That being said, I think THAT's what maybe caught on fire and burned the hell out of the thing! Sounds like it will all be ok in the long run. I'll keep you all updated! Thanks everyone!!!- Ewgraham

Hey all, I have a question.... A couple of weeks ago I had a beautiful Brisket going in my smoker. It had been on for 12 hours, I decided to just bring it in and finish in the oven because I needed to get some chickens on and I didn't have room for all of them together.
