    Questions about breadmakers

Check your model if it is the 4qt small mixer that did not work as well for me on bread. Maybe others had different experiences but it was just a little small for a good mix/knead for what I was mostly doing. Another good bread master to learn from is Paul Hollywood out of GB. He has some...

    My first run at ribs.

The smoke was light and blue and smelled very clean. It did not have that funny almost acrid smell. I had about a 3-5 minute spot where it got heavy. I missed a small spot of bark on the wood (it got missed) I put in but it was well seasoned and only lasted a minute it burned off right away...

OK I Admit It - I'm a Coffee Snob. Who Else??

I too am a coffee fiend and have spent embarrassing amounts of money on both coffee and makers. A few years ago my son bought me a Nespresso and honestly that makes the best cup of coffee I have ever had and part of that is their coffee too. I now keep that one for weekends and special coffee...

    My first run at ribs.

So I finally got my smoker seasoned and smoked my first 2 racks of ribs. Sorry if this post is too long. I did not get pictures but do have questions and a nice new way to eat leftover ribs that made the hubby go nuts. I did them 2 ways because my BIL said I needed to use that smoker as a stick...

    Questions about breadmakers

I have owned a few bread machines and they are great if what you are interested in is a fresh loaf of bread where you can throw it in and forget about it. Most will make a 1 or 1 1/2 lb loaf until you start getting into more pricey models. However, they are limited on loaf shapes. If you...

Marinate, smoke, & Sous vide DINOS

Well that is amazing. I am starting to understand all the talk about enabling. My son has been trying to get me to SV for 10+ years and I have continually fought it because I did not want to try to find a place for one more thing in my kitchen. I'm obviously going to have to rethink that and...

    It's Finally Home

Hopefully this is the correct place for this. I had been talking about buying a smoker for years and he would not let me because he wanted to build it. He built his brother one for his retirement gift as his trial run (9 years ago). So I have been waiting for this for a while. ITS FINALLY...

Black Garlic Chipotle Braised Short Ribs

Try truffle salt. I only use truffle oil in bread because to me its hard to get the balance right. Can be overwhelming. But I go through a good bit of the salt. I like the Tartuflanghe white Truffle salt. Amazing in mushroom risotto or a little on fries or popcorn.
