Looking for Advice for My First Brisket on the MBGS 800

Overall, the smoke went very well. Next time, I need to start the night before. I had to rush it after the wrap. Also, I need to cut thinner slices. The Killer Hogs TX Brisket rub was amazing! I’m probably overpaying for mostly salt and pepper though lol.

Looking for Advice for My First Brisket on the MBGS 800

I just wrapped in butcher paper with tallow. The bark is a little darker than this pic, I forgot to take a new one before wrapping.

Thanks Chris! You can’t tell in the picture, but I cut a marker on the one end.

First Butt on the MBGS 800

The smoke is coming from wood chunks that are on the grate in the ash pan.

Got it all trimmed up and rubbed down last night. Getting ready to place it on the smoker. Not the prettiest picture, but I didn’t take one last night.

First Butt on the MBGS 800

Sorry everyone , I forgot to take a pic of the finished product. It had good flavor but was a little tough. One thing I didn’t notice until I pulled it was that it was boneless. Must’ve been tagged incorrectly at the store. The finishing sauce was great. Being originally from North Carolina, I...

First Butt on the MBGS 800

I finally got it wrapped! It stalled out at 150 F for several hours and I was waiting for the fat to render before wrapping.

First Butt on the MBGS 800

Not much smoke going on right now. The meat is at 150 F internal and my wood chunks have burnt up. I will post a pic of it smoking tomorrow when I’m doing the brisket.

First Butt on the MBGS 800

I got a 8 to 9 pound bone-in Boston butt on the MBGS 800 right now (I should’ve weighed it after trimming). I scored the fat cap and rubbed it down with a little Sucklebusters SPG and Hog Waller. I placed it fat cap up and set the temp to 240 F. I have Royal Oak Lump mixed with hickory and apple...

Looking for Advice for My First Brisket on the MBGS 800

Keith, I’m not doing the smoke until Tuesday, but I will definitely post some pics during and after. When I went to the store to get drip pans, I saw a two pack of bone-in Boston butts for $1.87 a lbs and picked those up. So, now I’m going to smoke that for pulled pork tomorrow. I will create a...

Looking for Advice for My First Brisket on the MBGS 800

Thank you all for the tips! I went out and got a drip pan after the suggestions. Making sure it is the desired color before the wrap and checking the temp before 205 F is really good advice. Also, shaking the grate after a few hours was something that I would have never thought of doing. I will...

Looking for Advice for My First Brisket on the MBGS 800

I went to Costco last night and they had prime briskets for $3.99 a lbs. I ended picking out a 10 lbs one that was nice and floppy. I plan on cooking it on Tuesday. One question that I have is if I should put the rub on a just before the cook or overnight? I’m going to use Killer Hogs TX Brisket...

St Louis Ribs - First Smoke on the MBGS 800

No worries. I didn’t think you were being a douche. I will zip tie it off the next smoke I do. The full size grates on the racks would be nice. Now I just gotta figure out what to smoke next. The wife wants me to smoke something that we can use as meal prep for our work week. So I may try a...

St Louis Ribs - First Smoke on the MBGS 800

I noticed that the wiring wasn't very secure. Did you just zip tie the connector to the grill?

Thanks for the catch! It was just a typo. I meant to put 1 1/2 hours wrapped.

St Louis Ribs - First Smoke on the MBGS 800

I decided to smoke some St. Louis ribs for my first smoke on the MBGS 800. I rubbed them this morning around 8 am with Sucklebusters SPG, Sucklebusters Hog Waller, and a light dusting of Traeger Pork & Poultry. Used yellow mustard as a binder. I’m using Masterbuilt lump charcoal with apple wood...
