Lance R it is the Millermatic I have a engine driven Lincoln that I use for stick and never tried Tig so I didn't want to spend the extra money. The pulse mode takes a little getting use to but I love it. It is fast I don't think you can go wrong with one.
My opinion would be to use a water pan under your meat to catch the grease you can cook directly over the pan then move it to the side and cook a little to get a little of the sear. Diffusers will work also but you have to cook hot enough to let the jucie evaporate when it hits the plate. I...
Lance R the frame for the bottom is 2-1/2 × 2-1/2 × 3/16 the rest is 2x2- 14 ga. I'll weld it out with a Miller 255 pulse machine and weld my stainless with a Hobart Ironman 250. This will be #6 on builds.
I agree with smokerjim that does seem like a real long time. But I have used a weed burner to preheat large smokers but they generate very high heat you have to be careful how you use it. I'm not familiar with your smoker but I would try something other than the torch to start with.
