I have a Big Joe 2 , 4 burner weber genesis gasser a 18in weber kettle and a wood fired pizza oven and that covers everything I can cook with,...a man needs to have some options.
Put this on my Big Joe at 250F Applewood and B&B lump pulled at 175 IT placed in pan covered in foil to 203F rest in cooler 2 hrs It has nice bark and good smoke flavor
I marinated with Italian dressing seasoned with stubbs chicken rub wrapped in bacon brushed with BBQ sauce and smoked @ 325 with applewood then seared to crisp up everything.
Im doing these today and smoked them almost 3 hrs @ 250 put them in a pan with brown sugar honey and butter covered and bumped the heat to 275 to render the fat about an hr and half glaze then uncovered 1/2 hr.
