I just did one today in my vertical electric.. started at about 9:30 and finished about 30 minutes ago.. was a 7lb bone in BB, but that was the fastest I’ve had one cook. I went to wrap it after 6 1/2 hours and it was already 190... lol.. I wrapped it anyway and came out half hour later and...
One of the things I do is to take a paring knife and make slits/cuts into the pork. I’m not sure it does anything extra, but I try and shove seasoning and stuff in there..
Also maybe try and either go a little heavier on the rub this time and see how you like it? Or take it to an IT or 175...
You could try out a smoked carnitas recipe.. I did one in a crock pot a couple weeks back that was amazing, not smoked, but regular carnitas..
Maybe keep the pork in a glass bakeware that can allow for the carnitas juices to build up around it, yet allow some to get to the top part?

Hey everyone!! Everything turned out great!! The pork blade shoulder turned out a little drier than the full pork shoulders, but the flavor was amazing!!
The bbq soss also was fantastic as well!

So at around 11 I pulled the pork out, they temped between 170-185. I had been planning on wrapping soon anyways, so I figured no better time than now.
Bark looks good on them, I’m pretty happy with that. It’s not the best I have done I don’t think in terms of bark look, but...
Lol not finished yet. Been a hectic last couple weeks, barely got the firebox primered and painted. I was trying to do some more this weekend, but our days got moved around a little bit.
