    Brining Pork Chops

Iâ€8482m brining some Pork Chops that I plan to put on the grill tonight along with a foil pouch containing some soaked hickory, Mystique & pimento berries. The Chops are partially defrosted, in the interest of time I have placed them in the brine solution to get started. Is there any danger of...

Blowing meat with a fan - Why?

Iâ€8482ve noticed in Q-views; that some Q-ers seem to be using fans to blow air over meat before smoking. What is the purpose of this? Are there pros and cons to this practice? What meats does this work best with? Thanks in advance.

    Brined Turkey Thighs - Problem

I put some Turkey thighs to brine at about 10 pm yesterday, with the plan of smoking them today. But alas, something came up and I wont be able to smoke them before tomorrow (or if I really have to after 10 pm tonight). What do I do? Leave them in the brine? Or Should I remove them from the...

    Soup Stock for the Frugal

That is definitely a good idea. I used to do something similar back in Jamaica. Some times, I would strain, then freeze the stock in ice trays and keep the stock cubes in bags in the freezer. These are useful for adding to rice dishes, sauces, gravies, stews, braising etc. Shrimp and or...

    Smoker temp probe

Iâ€8482m not an expert…. However, I think that maybe a fan from a convection oven could be ducted into & out of a smoker. The bearings are probably sealed & heat resistant. The electrical would be outside of the smoker. If you need more info. Send me a PM.

Help - Roasting Pepper for Sauce

Thanks for the reply. I have seen posts on SMF, that it is not safe to store roasted garlic due to the possibility of picking up a bacteria (I do not recall the name of the bacteria, possibly botulism). Therefore, my real concern is it safe to make and store a sauce using roasted peppers. I...

    2 questions for 1st smoke

The “Drip Pan†that you refer to, is this a pan that is different from the water pan that came with the unit? Are you saying that you lay the water pan directly on top of the coals? Why do you put “salt†in the water pan? Thanks, Iâ€8482m looking forward to your reply.
