    Little update. Added another intake and exhaust. Bought a stainless vortex accessory off of amazon. I placed the vortex in a wok with room for the ash to fall. This UDS is very versatile now. Very pleased.

    Lao style beef cheek lettuce wraps. Super tender cheeks. Smoked for bout 2hrs with mesquite. 2-3hrs wrapped in banana leafs till 203. Finished with tons of fresh vegetables jasmine rice and wife’s homemade Thai chili sauce.

    Be mindful that stock 22” Weber grates may not work. I made my own grates out of round stock to fit. They measure 20”.

    Here ya go man. Something along the lines of this. I bought the Heavy Duty ones that Home Depot sells. Which are way heavier. I had to grind away material where the blushes are inside of the barrel and welded them. Used a square from the top to keep them equal.

    Lid off temps fall. Not drastically. 10 to 15 degrees but instantly level back off to previously adjusted temperature with lid reinstalled. Haven't had a fire choke out in 3 burns. Just needs more air in and out to reach higher temps. I'd honestly say I'd rather have it this way instead of...

    No obnoxious smoke just heat waves mostly after 20-25 minutes is really why I am not concerned. This thing will BBQ well but will need some tinkering for grilling/searing.

    This thing acts like a stick burner. Temp is 255 lower 270 upper wide open. Barely cracked 238 lower 255 upper. Rock solid for past 2 hours. Smoking some hot links.

    Boneless pork butt I got from the Asian store. Turned out really well. Cooked at 225 unwrapped then broiled it for 5 minutes to get skin super crunchy. Things was demolished by all. Simple pork rub with Malcom Reeds mop recipe using same rub. Really happy with the outcome.

    By what I understand it is the same as RO ridge. There is something in it. It burns clean after let sit and gets hot. I would prefer the RO lump but I don't think you will find tha @15 cents a pound.
