Extended hold time on tri tip
I'm going to smoke a tri tip for a party tomorrow. I have rested brisket for as long as 4 hours or so (wrapped and put in a dry cooler) no problem. I'll need about 1.5-2 hours of rest as I'll be traveling a ways. If I remove it at 125 degrees will the roast rest that long without going well...- Tyrone Shues
