Where to buy brisket in the Asheville area?

lol .. well, I just got back from visiting my Mom .. hometown of Lake Jackson TX. The HEB (regional TX grocer) had an unbelievable selection of beef .. especially brisket. I guess I'm going through withdrawal .. seeing all that smoker bait ;)

Where to buy brisket in the Asheville area?

We've got Sams Club - which I used to shop, and could get fairly decent brisket packers .. but we let the membership lapse.

Where to buy brisket in the Asheville area?

Thanks for your reply, schlotz. I've been to them before, and they're good at what they do .. but I recall them being on the higher end of the spectrum. Not that I'm not willing to pay accordingly for a good cut of meat - I'd just like to see if anyone else in my area has experience with a store...

So you want to try smoking your first Pork Shoulder

MJB05615, that makes me ask the general question (posed to any who have input) of how much the smoker’s “seasoning” comes into play? Is yours a new unit?

    What is better to insulate?

It’s really kinda hard to say .. as I’m just starting to get back into smoking - but I’d say a substantial improvement in heat retention. I’m going out of town for a week on Tuesday .. but when I get back, I think I’m going to run some tests to see if I can’t figure out the formula for an...

    What is better to insulate?

Starting to rain at 2 am ... had to pull the plug and bring the butt in the house, as the tarp covered smoker is in danger of getting shut down by Mother Nature. The “modified minion method did ok, but I do think it was lacking some control, and probably could do with a metal box and track to...

    What is better to insulate?

OK going again .. must be addicted (actually just trying to get the smoking part in before the rain comes tomorrow .. i’ll transfer inside of the oven if need be). Tonight I’m trying what I term as my “modified minion method”. Nothing in-between them to stop crossover, just hoping that the...

So you want to try smoking your first Pork Shoulder

I did notice recently that when the lid said 350 .. the internal (sitting on the rack) registered a full 50˚ lower!

    What is better to insulate?

FB is fully covered - main smoker barrel just the top (as much as the remnant would go). The insulation actually came with a metal band attached to it (I guess from where it was used in the chimney?) and I used that to fasten it to the front of the FB just below the lid .. then wrapped it over...

So you want to try smoking your first Pork Shoulder

2 Questions - 1 Is it possible to over-brine? I'm trying to work out the timeline .. without getting up in the middle of the night to either start the brine or move it to the smoker. And 2, do you let it rest to room temp before putting on the smoker? Thanks!

    What is better to insulate?
