Those are great pics and I love the bear climbing up your cabin. I think you gotta let that dove be just because of how cool that whole scene is. But in the field, I would not expect you to ask for I.D. Smoke 'em if you got em!

I don't know too much about the Atkins diet other than THAT GUY IS DEAD NOW! But when I ponder an Easter fatty i imagine sausage on the outside (of course) then fill with cubed ham and maybe cheesy potatoes and asparagus or something like that. I know that most of that isn't on your die-t but...

I'm with erain on this one. Clean it as much as you can, season it. Will be almost like a new smoker and you'll have the peace of mind knowing that you started off with a clean pit.

I've used venison w.out pork for a fatty several times before. Just make sure the meat has at least 10% fat and you should be fine. I love me a venison cheeseburger fatty!
Just pack on the course black pepper. The moistness of the belly itself will hold it in place. Just like applying rub to a different piece of meat. I'm doing my first belly this weekend too. Good luck!

I don't have a recipe but I have had smoked grass carp before and it was pretty good. Otherwise there is a place in Omaha (Joe Tess' Place) that specializes in serving fried carp. They just score the heck out of it so that the bones literally get cooked away by the hot oil.
We usually get a pretty decent return. We bought our first house this year (actually 1 yr ago tomorrow) so we are planning to buy a dinning room set we picked out. It's pretty sweet. Either that or we also need a new patio door in the basement, blinds, television, the list goes on.

I just bought one from Cabelas for $20. It is all stainless steel and even came with an extra gasket for the plunger. I doubt I will be replacing this thing anytime soon. Worth the $$ IMHO. When you buy the best you only cry once.

Whoo-Weee! A new LongHorn! I love mine. Bought it two Summers ago. Look into the mods for it. Mine was "pre-smoked" and mods were already done for me. You bought a great smoker. Holds temps real nice. Enjoy!
